Nel metodo ancestrale, l’uva vendemmiata matura inizia il processo di fermentazione che è però interrotto dall’avanzare del freddo invernale. Il mosto viene imbottigliato e il successivo arrivo della primavera risveglia i lieviti contenuti nella bottiglia che concludono la fermentazione nutrendosi degli zuccheri residui presenti. La rifermentazione in bottiglia caratterizza invece vini che hanno già completato la fermentazione alcolica e in cui si favorisce una seconda fermentazione grazie all’aggiunta di zuccheri (principalmente mosto) e lieviti. Il risultato è quello di avere nel bicchiere vini effervescenti, di frequente velati, con sentori caratterizzati dal lavoro dei lieviti che sono a contatto con il vino sul fondo della bottiglia (vini infatti detti anche “col fondo”
