Maestà della Formica - Careggine
Altezza media dei vigneti 300 mt sl.m. Età delle viti 15 anni. Da vendemmia anticipata per evitare eccessivo alcol ed aromi fruttati, con l’obiettivo di mantenere freschezza e qualche nota vegetale, che meglio evolve a note terziarie di idrocarburi. Pressatura soffice e fermentazione spontanea in vasca d’acciaio. Fermentazione malolattica non svolta e per evitare fermentazioni in bottiglia viene effettuato per 6 mesi un batonnage sulle fecce fini. Al gusto è fresco, cristallino, pulito, con grande sapidità al palato e buona mineralità
